‘Tis the Season! Graton Resort & Casino Introduces “Holiday Special Recipes” Food & Beverage Video Series

Recipes and demonstrations from the resort’s top-flight restaurants and lounges perfect for home holiday celebrations

ROHNERT PARK, Calif. (December 8, 2021) – Graton Resort & Casino has introduced a “Holiday Special Recipes” series of “how to” demonstration videos, highlighting outstanding culinary treats that you can make yourself, direct from the resort’s chefs and lounge mixologists. The videos, available on Graton’s YouTube channel, showcase a portfolio of food and drink ideas perfect for home holiday celebrations.

The series begins with six explainer videos: three make-ahead side dishes from Chef Dave Huerls from of Graton’s award-winning 630 Park Steakhouse; and three cocktail recipes courtesy of Jessica Christensen, mixologist for Graton’s lounges and bars (Sky Lounge, G Bar, Lobby Bar, Pool Bar, 8 Bar and 630 Park Bar).

Recipes:

Maple Chipotle Sweet Potato Mashers

Ingredients:

5 peeled sweet potatoes cut into 3” pieces

3 tbsp Kosher salt

1 cup Vermont maple syrup (amber preferred)

5 oz  chipotle peppers in adobo sauce

2 cups sour cream

3 tbsp kosher salt

½ cup melted butter

3 tbsp ground cinnamon

Parsnip Puree

Ingredients:

3 lbs peeled parsnips cut into 2” pieces

2 tsp kosher salt

1 cup heavy cream

¾ cup whole milk

¾ cup whole garlic cloves

¾ cup olive oil

2 tbsp sea salt

1 tsp white pepper

Butternut Squash Risotto Croquettes

Ingredients:

1 Arborio rice package

1 gallon of chicken or vegetable stock

½ cup olive oil

2 small yellow or white onions-fine diced

½ cup minced garlic

¼ cup sage soft chopped

4 bay leaves

4 cups butternut squash peeled, seeded and diced into small squares

4 cups grated parmesan cheese

3 tablespoon kosher salt

1 tablespoon ground white pepper

Breading

Canola fry oil

6 cups panko bread crumbs

3 cups all-purpose flour

3 cups scrambled eggs or scrambled egg whites

pinch of kosher

Pumpkin Alexander

Ingredients:

1 oz  Christian Brothers Brandy

½ oz  pumpkin chocolate liqueur

½ oz  Kahlua

½ oz  cinnamon simple syrup

1 tsp pumpkin puree

Ice

Garnish:

Whipped cream

Cinnamon stick

Holiday Champagne Cocktail

Ingredients:

1 oz Empress 1908 gin

½ oz Pama pomegranate liqueur

1 tsp of pomegranate puree

½ oz cranberry-orange simple syrup

Champagne of choice

Garnish:

5 cranberries

Rosemary sprig

Blood Orange Cosmo

Ingredients:

1¼ oz Grey Goose Orange

¾ oz blood orange liqueur

¾ oz cranberry juice

½ oz lime juice

Ice

Cranberries

Garnish:

Thinly sliced lime wheel
