Snoqualmie Casino’s Culinary Team Partners With the James Beard Foundation’s Taste America Seattle to Bring New Flavors to the Seattle Food Scene

In a region known for fine dining and excellent cuisine, it’s no surprise that the culinary team at Snoqualmie Casino are continually innovating and refining their menus to provide guests with an experience to remember.

Guests of Snoqualmie Casino’s signature restaurant, Vista Prime Steaks & Seafood, were delighted when fresh produce and herbs from Snoqualmie Casino’s organic vegetable garden began appearing on their plates in early summer. In fact, the sun ripened sweet heirloom tomatoes and pea shoots grown at the casino were essential ingredients in Vista Prime Steak & Seafood’s entry into the James Beard Blended Burger Project in July. The burger made from a combination of Dry Aged Washington Prime Beef and Chanterelle mushrooms enjoyed a top ten finish in the nation of over 400 burger entries.

In early October, Snoqualmie Casino participated in Taste America bringing the James Beard Foundation programs to exciting culinary destinations. First stop was Raising the Bar, a cocktail party held at Block 41, a chic contemporary venue located in downtown Seattle. Guests dined on exquisite bites and sipped exotic cocktails created by top rising culinary stars from the Pacific Northwest. The Snoqualmie team created a delicious avocado geoduck fritter accompanied by red spring onion, dashi, rayu and kinome. Chefs Jack Wynne and Justin Lee were in attendance, serving their innovative course to influencers, bloggers and media stars.

Day two of Taste America was held at the five-star Fairmont Olympic Hotel, a perfect setting for their upscale tasting reception and gala dinner. Chefs Justin and Jack brought their “A” game with a sumptuous plate of braised beef cheek balanced by a charred sweet corn sorbet, black garlic and fall onion. The evening was immaculate, held amongst delicate chandeliers and ornate early 20th century walls. Attendees were wowed by the unique concept and flavor palate that Snoqualmie Casino provided. The chefs received enormous praise from the crowd as foodies gathered around, indulging in seconds and thirds.
